and I wanted this...
Ideally, an individual tall baked cheesecake. I have seen desserts like these in cookery magazines and on TV and thought that they looked great.
However, I wondered where would I get tins to bake them in and also, I already have so many tins of all shapes & sizes that I could supply a small bakery.
When browsing about in one of my favourite websites Pinterest I came across this tip, tried it out and it worked really well.

Recycle tins such as baked bean tins. These ones (in the top photo) were perfect as they were not too high.
Fortunately, I have a tin opener like this one. It cuts a really clean finish and takes away the inside 'lip' from the can but any tin opener will do, of course.

Take the top and bottom off the tin and cover the bottom with tin foil. I kept the bottom piece and pushed it into the foil. It didn't stick but if held carefully it gave a more solid base to the bottom of the cake tin when moving it about. (Hope I'm making myself clear)

I used this Cake Release Spray to coat the tin before putting anything in. This stuff is amazing. My sister in Canada has been using it for 30 years or more. I tried many places in the past to get it or something like it but it is only since the cupcake epidemic that things like this became freely available in the supermarkets around Ireland. I try not to think about the additives that are in it (if any) and still use the traditional methods of preparing cake tins most of the time but for tricky things like this it is invaluable.

I used a tried and tested baked cheesecake recipe. I divided the mixture between 6 of these tins and baked until cooked but still a bit wobbly when touched.

The cooked cheesecake came out of the tin very easily by slipping it through from the bottom of the tin. I tried one with the bottom attached and it was a bit of a disaster having to turn it upside down etc. It didn't come away very easily either.

The end result.
I've tried lots of different recipes and ordinary cakes work really well too.
